Angela’s Healthy Homemade Banana Muffins


2 cups brown rice flour (or healthy suggested alternative see below)
1 1/2 teaspoons baking powder
1 1/2 teaspoon bicarbonate of soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup Xylitol (natural sugar replacement made from the cob of corn –Low GI)
1 cup mashed bananas
1 egg
1 cup organic whole milk (or milk substitute – rice, oat, soy, almond milk)
2 teaspoons vanilla essence


1. Preheat oven at 200 C
2. Combine all ingredients in large bowl and mix.
3. Spoon mixture into muffin trays or a rectangular oven pan depending on preference.
4.Cook for 15-20 minutes or until golden brown. (To test - slice the center with a knife, if it comes out clean it is ready! If the knife comes out with mixture stuck to it may need just a bit longer!)

ALTERNATIVE to 2 cups of flour:

1 cup brown rice flour
½ cup oats
¼ cup LSA
¼ cup coconut (shaved / desecrated)
